| 内容記述 | This study presents a comparative analysis of dairy product processing technologies and associated terminology across the Tibetan Plateau and Himalayan region, where dairy products constitute a significant pastoral resource. A comprehensive database was created regarding dairy-related descriptions extracted from various sources in Tibetan, Chinese, and English, incorporating geographical information for spatial analysis. Particular emphasis was placed on cheese production, which exhibited the most diverse processing techniques and vocabulary. The analysis identified 58 distinct cheese-related terms and their corresponding processing methodologies. Key findings revealed that (1) aged cheese varieties are distributed from the southern Tibetan Plateau to the southern Himalayan foothills, with regional variations comprising two unsealed and two sealed types; and (2) two distinct cheese varieties utilizing casein and protein extensibility through pH control are found in a geographical continuum from the central Tibetan Plateau to the Southern Himalayan foothills. | |||||||||||
