| 内容記述 | This study aimed to 1) understand the milk processing systems of Bhutia, Lepcha, and Sherpa in north Sikkim, 2) clarify the characteristics of milk culture in this area, and 3) clarify the transmission and change of milk culture to north Sikkim by comparing the milk processing systems with those of the surrounding areas. A field survey was conducted in September 2023 in North Sikkim District, Sikkim State, north India, among Sherpa pastoralists and Bhutia and Lepcha agro-pastoralists. The results of the field survey and the comparative analysis show that the milk culture in north Sikkim is characterized as such: 1) Sour milk is not processed and not used for food; 2) naturally fermented milk and/or whey are used as coagulants in north Sikkim, which is assumed to have spread from north Asia through the north-eastern Tibetan Plateau; 3) matured cheese is processed in north Sikkim, and this processing to matured cheese is characteristic of the central and eastern parts of the southern slopes of the Himalayas; and 4) matured cream, philu, is processed in Sikkim, and this processing is only conducted in the central part of the southern slopes of the Himalayas, from Sikkim to Bhutan. Furthermore, it was clarified as the recent change that 5) the Sherpas who migrated from Nepal to north Sikkim do not need to store milk fat for long periods due to the high consumption and sale of butter, resulting in the change to not adopting for processing butter oil; 6) since the Sherpa in Sikkim changed their milk processing without cream being separated first, their milk processing technique transformed from cream separation processes to fermentation processes. Future studies on milk cultural transmission and change should analyze milk processing techniques in relation to local food culture. | |||||||||||
